Confiteor

Orange Chicken

For chicken nuggets

  • 4 chicken breasts
  • 2 cups flour
  • 2 cylinders of panko breadcrumbs
  • 6 to 8 large eggs

For orange sauce

  • 1 small jar of orange preserves
  • Equal amount of peach preserves
  • Half the amount of orange preserves in barbecue sauce (Sweet Baby Ray’s Original in original recipe)
  • ¾ cup soy sauce
  • Equal parts grated ginger and minced garlic
  • 3 or 4 large shakes of sesame oil
  • ¼ cup each mirin, sake, and rice vinegar
  • Black pepper

Begin by bringing some peanut oil (enough to cover two small handfuls of chicken) to 350°F in a frying dish on the stove. Preheat oven to 300°F and place in a large baking dish. Cut the chicken into cubes. In three shallow baking dishes or saucers, add, respectively, the flour, the eggs (very thoroughly beaten), and the breadcrumbs.

Start breading the chicken by putting a large handful into the flour and coating thoroughly, then move it piece-by-piece through the egg, and the breadcrumbs, where you will let them rest until you’ve breaded a full batch of chicken pieces (about one large or two small handfuls); put breaded chicken in frying oil, and let cook until golden brown. Once a batch is fried, place in baking dish in the oven. Repeat the steps in this paragraph until all the chicken has been fried, being sure to keep the oil at a sufficient level, and at/around 300-350°F.

While you are frying the chicken, in a sauce pot on another burner on a low heat, use a whisk combine all the ingredients listed in the orange sauce section above. Do not let boil, but only simmer at a very low simmer.

Once all the chicken has been fried, move the finished nuggets from the baking dish in the oven to a very large bowl, and pour over about 1/3 of the sauce to start, tossing the bowl thoroughly, before moving on to adding more off the sauce until the nuggets are fully coated. Serve with rice.

Be warned, this did take me an hour and a half to cook.

Honey BBQ Chicken Strips

Chicken

  • Same as above recipe
  • Though, this recipe required less breadcrumbs than the previous one; only like 1 1/2 cylinders

Sauce

  • 1 1/2 cup bbq sauce (Again, I used Sweet Baby Ray's Original)
  • 1/2 cup honey
  • Few dashes of sesame oil
  • 1/4 cup each apple cider vinegar, soy sauce, and sake
  • Chinese 5 Spice to taste
  • 2 tablespoons tomato paste
  • 1 tablespoon both minced garlic and ginger

The directions for both are essentially the same as the previous recipe, except cut the chicken into strips instead of nuggets. I had mine as a wrap in a tortilla with lettuce, tomato, onion, and cheddar.

I had a dream that Canada suddenly had two new provinces and it really threw me off. Ontario was split and I think the other one was over in New Brunswick

Eggplant stew of some sort

  • 2 eggplants (one of mine went bad so I only used one ;-;)
  • 6 carrots
  • 6 celery stalks
  • 10 mushrooms
  • 6 cloves of garlic
  • 1 large shallot
  • 2 medium onions
  • 3 teaspoons khmeli suneli
  • Salt & pepper
  • 1-2 cups veggie broth
  • 1 large can of whole, peeled tomatoes
  • 1 cup dry red wine

Begin by cutting the allia (cut big for the shallot and onions, minced for the garlic), and softening them in some olive oil in a pot. Next, the carrots (I cut them into simple rounds), mushrooms (I cut them into maybe 6 pieces), and celery. After everything has softened a little, add the tomatoes (crushing them gently), the wine, the khmeli suneli, and salt & pepper. Let simmer for 30 or so minutes.

Pre-heat oven to 425°f. Cut the eggplants in half length-wise, and then half again, cutting the quarters into big pieces. Toss in a bowl with olive oil and salt, and put on a sheet tray, roasting in the oven. Once browned, add to stew, and simmer for another hour. Serve on/alongside mashed potatoes.

I had to use all three of my non-English Bibles (Vulgate, Armenian, French) to translate that verse because I couldn't decide how to translate "behold" lol

I was going to translate some parts of today's readings but I took a benadryl and then slept for 2 hours and woke up so groggy 😭
