Rice: I like to use long grain rice. You can use any kind of rice you like for this recipe, even brown rice if that’s your preference. Just keep in mind different kinds of rice have different cooking times.
Chicken broth: Adds a meaty flavor to the dish.
Unsalted butter: You can use salted if you like – just reduce the amount of extra salt added. If you prefer olive oil, use that instead.
Garlic powder: For a garlicky twist.
Sharp cheddar cheese: Or any other cheese you like. I recommend shredding your own for the best melt.
Milk: Just a splash. This is optional but makes it extra-creamy.

Store: Keep leftovers in an airtight container in the refrigerator and eat within 3 days.
Freeze: While this recipe can be frozen, the texture of the cheesy rice might change a bit. Store leftovers in a freezer-safe container or individual portion containers like Souper Cubes (I got mine here!) and freeze for up to 3 months.
Thaw:
 Thaw overnight in the refrigerator.

Can I make it using leftover rice?

Yes you can. Just put the leftover cooked rice in a pan with all the other ingredients and cook, stirring, until heated through. If you’re using this method, you’ll only need a splash of chicken broth instead of 2 cups.

Is there a low carb alternative?

Sure, use your box grater to grate cauliflower and use that in place of the rice. As cauliflower doesn’t absorb water like rice does, you will only need a splash of chicken broth for this version too.

  • Rinse rice in a fine mesh sieve under cold water until water runs clear. Pour broth into a medium saucepan and bring to a boil.
  • Once boiling, stir in rice. Turn heat down to low and cover with lid. Cook for 15 to 20 minutes, or until rice is tender.
  • Fluff rice with a fork and add butter, garlic powder, salt, and pepper. Cook for 1 or 2 minutes on low heat.
  • Stir in cheese until melted and add a splash of milk for creaminess, if desired. Serve warm.
