Maybe the heat or humidity pushes your dough to ferment quicker than expected or you sleep in too long when you’re dough is proofing on the counter overnight (this has been me) causing your sourdough dough to be majorly over-proofed. But all is not lost!   Here’s three ways salvage it:   1. If it’s not totally unmanageable, try to shape and bake up your loaf/loaves anyway. You might be surprised. Some of my best loaves have come from dough I thought was too far gone. Plus, IT’S STILL BREAD. So even if it’s a little flatter than normal, you still made a loaf of sourdough and should be proud.   2.
