One Day in the Life of Andrei Arsenevich 1999
One of my favorite documentary.
It starts with Tarkovski as he was very sick and doing the editing of The Sacrifice.
You can see him with his family and him talk about Russia and filmmaking.
Then it covers Andrei's fabulous career movie by movie.
Just a splendid film.
Because Andrei's films are so deep and requires multiple viewing, I'd recommend this documentary even to people who be seen his movies before and also to the ones who didn't.

The Station Agent 2003
The Station Agent really look and sound like your Classic american independant film from the mid 2000's.
Focusing more on Character's development and them adapting to the world they live in than the plot.
