¼ cup dried wood ear mushrooms
80g bean thread noodle
1 egg
1 tbsp ground pepper
1 tbsp sugar
4 tsp fish sauce
1 tbsp chicken bouillon
1 packet rice paper or large spring roll wrappers
Neutral oil for frying 

Fresh oak leaf lettuce, mint and thai basil to serve
