There’s just something incredibly sexy about the ubiquitous Milk Shokupan.

The shokupan is a rectangular bread loaf with barely a hint of crust with a feathery soft texture that tears into wispy strands and melts in your mouth. The texture is so delicate and cottony, with a milky-sweet taste that soothes the soul as much it does the taste buds 😋😋

The traditional version had raisins but over the years, the brioche recipe has been modernised and now comes with chocolate chip and pearl sugar without compromising the traditional flavour. I made this recipe twice and I forgot the pearl sugar the second time 🤦‍♀️ Still decadent, nevertheless!  This recipe is inspired by the Cramique and I had used the Stiff Sweet Starter as a natural leavener. Being stronger and slower in fermentation than a regular starter, I believe it is the best choice for a heavily enriched dough like this. A MUST for coffee lovers. Infuse coffee into bread by spreading the coffee filling in the dough. You may vary the flavor by substituting the coffee powder with other flavor such as cocoa powder, matcha powder or even milk powder.

(Recipe yields 8 buns)

*Sweet Stiff Starter*
30g sourdough starter 
90g bread flour 
40g water 
15g sugar

*Dough*
230g bread flour 
20g sugar
4g salt
165g milk
20g unsalted butter
All of the sweet stiff starter

*Coffee Filling*
90g softened butter
50g sugar
One egg (55g)
80g milk powder
8g Coffee powder
- mix butter with sugar
- Add egg in batches, mix well
- Add milk powder and coffee powder, mix well

Method 
➡️ Prepare sweet stiff starter and use when it triples, about 7-8hr at 27-28C.
