This is a cake that takes time to master, but tastes absolutely divine.

If you’d like, remove the stems from a few fresh bay leaves and grind them in a spice grinder or food processor, then rub them through a fine sieve and sprinkle the top of the pie with the dust. If you don’t have fresh bay leaves, you can add a few sprigs of rosemary to (and immediately remove it from) the syrup at the same time as the cinnamon and cardamom. Sliced lemongrass, lemon balm or verbena are lovely alternatives.
