Italian durum wheat flour (Semolina) replaces the egg white's binding ability. Your pasta dough consists of both ‘wet’ and ‘dry’ components, so the only limit to what you can create is your imagination! 
For fresh eggs pasta, my usual ratio is based on 1 egg per 100g of flour. 
For white pasta:
Since an egg weighs approximately 75g, I use 75g of water for every 100g of flour. (2 parts “00tipo” 1 part semolina)

This approach opens up the possibility of creating thousands of different types of pasta playing with different types of flours, eggs, veggies puree…
Just remember: you want a dough that is dry but malleable.
