Our environmental and social efforts
Reducing food waste
At our store, we buy whole cows, so we cut each part of the cow to produce scraps of meat. The freshness and taste are outstanding, so we make use of the scraps and use them in our staff's meals. The leftover tendon meat is used to make tendon ponzu sauce and tendon soup, so ingredients are not wasted. Additionally, with the aim of reducing food loss, we are currently developing a new menu by mincing tendon meat.
