Excellent served with coffee or as a snack alone, this charming twice-baked cookie is a variation on the classic crispy biscotti, but flavored with the delicate essence of honey and orange. Although the honey marries beautifully with other flavors, it is still the most profound taste, so be sure to choose a high quality honey. Any nut can be used (even the traditional pine nut), but we're partial to how wonderfully pistachios complement the honey in this combination.

1.5 cups of 00 flour 
1/2 cup sugar
2 tsp honey
3/4 cups of half chopped almonds
1.5 tsp baking powder
Half orange zest
Half lemon zest 
Pinch of salt 
1 tsp vanilla 
2 eggs

Combine all of the ingredients into a bowl and mix until a dough forms.

Then shape it into a rectangle on a lined baking sheet and  Bake at 350°F for 30 minutes. 

Let it rest for 15 minutes, then slice it into pieces about 1 inch thick. 

Return the slices to the oven at 325°F for 10 minutes for that perfect crunch!

Melt your chocolate and dip them and lay them back onto the baking sheet and put into the freezer for a quicker dry. 

You can store these for up to 1 month if stored into an air tight container !
