Eating habit

Person A
In my opinion, all this ‘eat five portions of fruit and veg a day’ is a big con! Most of my adult
life I’ve avoided eating fruit and vegetables, and I’m super-fit. I think it’s just big business
trying to sell us so-called superfoods that we don’t need. As prehistoric people we only ate
meat, plus a few roots and berries. My diet is very simple – I eat a lot of bread and pasta,
meat and eggs, some fats in the form of cheese, and I have plenty of fluids.

Person B
I live by the mantra ‘you are what you eat’. I focus on natural proteins, and I don’t eat any
processed food or simple carbohydrates at all. Not only that, I fast from 5pm to 11am the
following day – all I have in the mornings is a black coffee. Lots of research has been done to
show how intermittent fasting combined with eating the right food can help combat things
like depression, high blood pressure, heart disease and diabetes.

Person C
I have a glass of milk for breakfast and I have lunch at school. The canteen there’s OK, I
suppose, though I do think they should prepare more vegetable dishes. A lot of the food is
meat-based and most things are fried, which isn’t very healthy. At least they always have
fresh fruit every day, which is one good thing. When I get home I normally have lots of
carbohydrates, as I do a lot of sports and I’m always hungry!

Person D
I never cook – I don’t have time to even think about what to eat! In my opinion, food
shouldn’t dominate our lives – other things are far more important. I’m a full-time university
student and I also work in the evenings, so I eat whatever my parents cook for me. If I’m
going straight from class to work, I’ll eat some street food. Luckily, a lot of street food is
incredibly healthy – especially spring rolls and noodle soup, which is delicious.

Stress

1. Despite its bad reputation, stress historically had a vital role to play. Commonly referred
to as the ‘fight or flight’ mode, the sudden release of stress hormones like adrenaline and
cortisol causes the heart to beat faster, airways to dilate and blood vessels to open up, all of
which push the body towards optimal performance and, ultimately, survival. In the rest of
the animal kingdom, this is still often the difference between life and death. As he springs
off to freedom, the lucky gazelle who escapes the lion can thank this primal evolutionary
response.
2. In ordinary modern life, although we’re in little danger of being stalked by wild beasts
down city streets, our bodies react to stress in the same ways. Experiencing anxiety, fear
and stress is considered a normal part of life when it is occasional and temporary, such as
feeling anxious and stressed before an exam or a job interview. It is when these acute
reactions are prolonged or cannot be switched off, however, that serious physical, social
and cognitive issues can result. In contrast to the normal everyday stress of modern life,
chronic stress is a pathological state which can significantly interfere with daily living
activities such as work, school and relationships, wreaking havoc on the body’s immune,
metabolic and cardiovascular systems.
3. Of major concern is the impact on the brain. Researchers have found that the
hippocampus, the control centre of memory and our ability to learn, can physically shrink in
response to prolonged release of stress hormones like cortisol which result from chronic
stress. Neurons in this area do not just get smaller, but actually die, which weakens the
neural connections, affecting the way memories are organised and stored in the brain. A
chronically stressed person would recognise this as a ‘brain fog’, and it also has ramifications
for other areas such as creativity and adaptability.
4. While this part of the brain gets smaller, another area, the amygdala, which is involved in
processing emotions, can grow with chronic stress. Across species, a larger amygdala has
been found to correlate with aggression and this, coupled with the weakened connection to
the prefrontal cortex, the brain’s decision-making centre, can profoundly impact mood and
behaviour. With the link between emotions and decision-making compromised, a person is
much less able to stop and reflect, becoming instead reactive and short-fused. Think of the
difference between being able to tolerate a screaming child and instead giving in to the
desire to scream back.
5. In the past, it was accepted that there was a limited number of neurons in the brain and
as they died off as a result of ageing, stress or substance abuse, for instance, they were lost
forever. It turns out, however, that this is not the case and that stem cells within the brain
are actually able to create new neurons. In other words, lost neurons can be replaced. What
makes this discovery even more powerful is the fact that replenishing neurons is rather
straightforward. One of the most powerful stimulants for neuron growth is physical activity.
So, in addition to its role in the reduction of stress hormones in the first place, and its ability
to stimulate the release of endorphins, exercise has now been shown to contribute to the
repair of the chronically stressed brain.

I totally agree that it is much easier to make new friends these days because of computers
and mobile phones . Thanks to those devices, we are exposed to the social networking

I really love my house very much because it is the place where I was born and grew up.
There are three floors in my house. On the first floor, there is a living room and a kitchen. I
spend most of my time in the living room and we talk, watch movies together. There is

Among the 4 seasons, I like autumn the most because it's a great time. It is not too hot or
too cold and the air seems fresher. I love the changing of the leaves. Special, this time
happens to be the festival that I love most. It's the Mid Autumn Festival. I can see the full
moon and enjoy the moon cake with all members of my family.
- What is the weather like, today?
Today the weather is very good. It is amazing because it's cloudy. I can go hang out with my
friend. We can take a beautiful photograph. I really love this weather, it makes me feel
happy and relaxed.

I can see in the picture that it is a traditional market.
There are a lot of people shopping there but this
photo is focusing on an old lady wearing pink shirt.
She is standing in front of a vegetable shop and
the lady is holding some carrots. There is a boy child
next to the lady. I guess he is the lady’s niece.
- When is the last time you went to a market?
The last time I went to market is this morning. My friend took me there on her bike. I bought
my breakfast and some vegetables for my lunch there. My friend dropped me off at the
butcher's after she had a breakfast. Then she came back to pick me up and take the food
home.
- Do you like shopping in traditional market? Why?
I like going to the traditional market because it's very crowded and bustling. The food here is
delicious and varied. Vegetables and meat are always fresh and much cheaper than in the
supermarket. It is affordable for me to buy things at the traditional market.

Task 3:

- Tell me what you can see in two photographs.


In the first photo i see a offline class. There are tables and chairs for students. The man in the
photo is writing on the board. I guess he is the teacher. And the person sitting below is
probably a student.
In the second photo there is a group of 3 girls sitting together on a sofa. Each of them is
holding a laptop. It seems they are students and are discussing online lessons with each
other.

- What are the advantages and disadvantages of learning in these two environments?
An offline class will make teachers and students closer. Teachers can know what students
are doing, if they understand the lesson or not. However, offline classes have the
disadvantage of being limited in space and time.
On the other hand, in online classes, students can join anytime and anywhere. All they need
is just a good internet connection. But working on the computer for a long time can be
harmful to their health. Besides, poor students do not have laptop or internet connection for
learning online.

- Which environment would you prefer to learn in? Why?


I prefer to take offline classes because I like the feeling of face-to-face interaction with
teachers and friends. When I study offline, I have many friends sitting around me. But when
joining online lessons, it's just me sitting alone with my laptop. On the other hand, last year, I
had been studying online for a long time and it made me shortsighted due to looking at the
computer for too long. That's why I prefer to study offline over online.
Task 4:
- Tell me about a traditional dish of your country?
- What do you like/dislike most when making it?
- How do people in your country feel about that dish?

My favorite traditional dish in my country is “goi cuon”. This dish is very simple. It consists of
shrimp, pork, herbs and rice paper. The ingredients are wrapped in rice paper and dipped
with sweet and sour fish sauce. Many foreigners also love this dish. This is a must try dish
when coming to Vietnam.
This dish is also very simple to make. I would love to make this at home because it's quick
and convenient. I just need to boil shrimp and meat, wash vegetables and make fish sauce.
My favorite part is wrapping shrimp, meat and vegetables into rice paper. After being dipped
in water, the rice paper is a bit sticky and you have to be very skillful to not tear them when
rolling. I usually have the best rolls, so my mom always lets me do this part at home.
Vietnamese people also love this dish. We can eat it for any meal of the day and at any time
of the year. This dish is sold a lot on the street and enjoying them at the street stall is much
better than in a restaurant.
