Schulthauser 2020
Pinot blanc, South Tyrol’s most important grape variety, has awakened from its
slumber and has evolved a calling-card wine for the region. Schulthauser,
having been vini ed and bottled for the rst time in 1982, is the consum- mate
South Tyrolean Pinot blanc. This wine isn’t ostentatious, but is the consummate
fresh-and-fruity Pinot blanc, the enjoyment of which is found both in its creamy
softness and its lively acidity.

Vinification:
The majority (85%) is fermented in stainless-steel tanks and the remainder in
oak barrels, followed by malolactic fermentation. The two wines are combined
in February.

Pairing Recommendations:
A premium aperitif and summer wine, it is also quite versatile when it comes to
food pairing: it goes well not only with seafood and sh but also with delicate
dishes made with wild fowl. It is especially recommended as an accompaniment
to South Tyrolean Schlutzkrapfen.

At the heart of the impressive vineyard landscape of the South Tyrolean,
scattered among the sunny slopes and hidden in age-old estates, we find the
farmhouses of the 350 members of the San Michele-Appiano winery.
Numerous international awards testify to the unrivalled success of their
unremitting search for quality. Hans Terzer, chief wine maker of the “San
Michele brotherhood” and widely renowned wine wizard has unerringly paved
the way to top quality.
Today, the vaulted cellars of the hundred-year-old building store a wide
variety of first-class white and red wines, modern labels and time-tested
classic wines alike, which are sold to more than 30 countries worldwide.
Like a fortress the San Michele-Appiano winery towers above the South
Tyrolean wine route. Founded in 1907, the winery has come to be one of the
largest and most successful wine businesses of South Tyrol and, indeed, of
Italy.

Respect for the grape is the top priority, too: nothing is more important than accepting
the particularities of the individual vineyard sites and the different grape varieties.
Exceptional, fully ripe grapes are a prerequisite for high-quality wines, and they are
pressed with meticulous attention paid to different vineyard sites and differences in
quality. Only through individual vinification can the unique terroir be emphasized and
highlighted. The wine grows towards full maturity in stainless steel tanks and oak
barrels.

One of the finest co-operatives in Alto Adige, Italy, the St. Michael-Eppan Winery is
named after the village in which it is located. Founded in 1909, the co-operative has
more than 350 members, all of whom share a commitment to ecological balance in their
vineyards. In 2000, Gambero Rosso named St. Michael-Eppan as the best Italian
winery of the year and its long-time winemaker Hans Terzer as one of the ten best
winemakers in the world. Most of the fruit is sourced from vineyards located in the
southern Tyrol: Appiano, Caldaro and Mazzon at elevations of 984-1,640 feet. St.
Michael-Eppan produces three distinct lines: the Classic Line – archetypes of their
varietals and appellations with outstanding price to quality ratio; the Cru Line – unique
terroir based wines from extraordinary single vineyard sites and Sanct Valentin – top
tier wines from rigorously selected grapes.

BARRIQUE CELLARS
Since the ‘80s the white and red barrique cellars have been the jewels of the winery
and inside them, in small French oak barrels, matures a selection of the most
valuable and highest quality wines
Today, as in the past, the traditional maturation of wines in large oak barrels plays
an important role at St. Michael-Eppan Winery. For this reason, the historical cellar
has been renovated with more than 50 large oak barrels over the years.
One cannot but notice the four historical 150 hectolitre barrels that,
with their antique carvings, depict events going back to 1907.

Stainless steel is indispensable for modern winemaking. It is the ideal material for
both fermentation and preservation tanks, guaranteeing hygiene and cleanliness.
Stainless steel facilitates a pure must and improved wine transformation,
emphasising the freshness and aromas of the different varieties

AND AREA OF CONFERMENT
Appiano - at the doorstep of the Dolomites - with over 1,000 hectares of vineyards, is
the largest South Tyrolean wine-growing municipality in the heart of Bolzano
Province.
The 385 ha of vineyards of the winery’s 330 members are scattered across sunny
slopes, where nature offers first-class conditions for outstanding wines.
