Ingredients:

4 sweet potatoes

2 avocados

1 lemon

Instructions:
Step 1:
Cut sweet potato lengthwise into 1/4-inch thick slabs. Place
in a toaster (or air fryer); run through the toast cycle on
darkest setting, or until softened.

Step 2:
Meanwhile, peel and thinly slice avocado. Zest 1 tsp lemon
zest, then cut lemon into wedges.

Step 3:
Layer avocado slices on sweet potato slabs; sprinkle with
salt and lemon zest. Squeeze with lemon wedge before
enjoying.
