specializing in coffee jelly and Buko pandan desserts to spice up any party or gathering.
This was the brainchild of an impassioned entrepreneur who saw an unused space in the
demand for desserts that were natural, indulgent, and combined the rich, bitter flavor of
coffee with the soft texture that came from being gelatinous.

PRODUCTION PROCESS
Production for Jellycacies begins with washing and maintaining hygiene, with the
food handled properly; it's here that the rigid cleanliness and hygiene applied
during the production of food set off its distinct character for the Coffee Jelly and
Buko Pandan Jelly.
For the coffee jelly we begin by brewing 4 cups strong brewed coffee, 1/2 cup sugar,
and one packet (24g) of gelatin or agar-agar. A good quality coffee should be chosen;
a strong brew is used so that the flavor of the coffee shines in the final product. We
sprinkle the gelatin in a bowl over 1 cup of cold water. This is left to bloom for about 5
minutes. Very important; this is the part where the gelatin allows its dissolution evenly
once mixed with the hot liquid.
Now, let's talk about our Buko Pandan Jelly. We begin by getting flavor from fresh pandan leaves.
So we boil it in water to get an aromatic extract that forms the jelly. Then, we take this pandan
extract and combine it with 2 cups of creamy coconut milk, 1/2 cup of sugar, and one more packet
(24g) of gelatin, into a separate saucepan. We stir the mixture over medium heat until the gelatin is
completely dissolved with the coffee jelly, which ensures that all the ingredients are harmonized
when brought into contact with low heat.
