INGREDIENTS

CHICKEN GYRO BOWL


Chicken Marinade
 1/4 cup plain Greek yogurt low fat or full fat are best
 2 tablespoons fresh lemon juice
 2 cloves of garlic grated
 1/2 teaspoon smoked paprika
 Salt and freshly ground black pepper to taste
 1 1/4 pounds boneless skinless chicken thighs cut into bite sized pieces

Sour cream sauce


 1 cup shredded/diced cucumber
 190 grams Sour Cream
 2 tablespoons fresh lemon juice
 ½ table spoon chives
 4 cloves garlic
 1 medium size white onion (Finely diced)

Other Ingredients
 1 cup quartered tomatoes
 1 cup diced cucumber
 1/4 cup diced white onion
 1/3 cup mushrooms sliced
 3 stalks bok choy washed
 4 cloves garlic
 2 cups cooked rice

No-Bake Peanut Butter Cookies


 ⅜ cup natural peanut butter (equivalent to 6 tablespoons)
 2 tablespoons sugar
 1/8 cup peanut butter
 1/8 cup low-fat milk
 ⅞ cup rolled oats (equivalent to 7/8 cup or approximately 14 tablespoons)

 ½ teaspoon vanilla extract

Yield: 12 cookies

Cucumber Lemonade (1 pitcher)


 1 large cucumber peeled and diced
 2 lemon (juiced)
