Design Brief
Client: The head chef at your Local Café.
Background: The head chef at your Local Café has enlisted your expertise to craft a standout breakfast special
- "The Vegetarian Big Breakfast" with the customizable feature of "Eggs Your Way." This special dish aims to
cater to vegetarian preferences while offering a personalized touch through customizable egg preparations.
Objective: To create an innovative and visually appealing breakfast special that satisfies vegetarian diners while
showcasing culinary skills and creativity.
Constraints:
• Time limit: 50 minutes for preparation on the day of the practical exam.
• Ingredients must be readily available and within budget.
• The dish should align with the café's branding and overall menu.
• Closure of the café for the day is required as part of the practical component, necessitating efficient
teamwork.

Sketch and Justification of Design Solution
Justification
• Colour and Texture Contrast: A visually appealing dish often results from a
harmonious balance of colours and textures. For "The Vegetarian Big
Breakfast," we can incorporate a variety of vegetables, such as tomatoes,

customizable eggs can add a rich golden hue, contrasting beautifully with the

• Height and Layering: Building the dish in a vertical manner adds visual
interest and a sense of abundance. For instance, if the eggs are placed at the
top, followed by a layer of sautéed spinach, garlic mushrooms, and grilled
sliced tomatoes towards the base.
• Branding and Consistency: The dish should align with the café's branding
and overall menu. If the café leans towards comfort food, we can opt for a
heartier presentation with dishes like hash browns. (Which have been
included in this recipe)
• Efficiency: Given the time constraint of 50 minutes, it's crucial to design a
dish that allows for efficient preparation and cooking. Assigning specific tasks
to each team member, such as vegetable preparation, egg cooking, and plate
assembly, can help maximize efficiency and ensure smooth work.
My design fits all these criteria by show casing the different colours and textures
through the use of a ciabatta loaf sandwich containing the egg, tomato,
mushrooms and the spinach. While the hashbrown is off to the side, showing of
its golden and crispy colour and texture. It also meets the height and layering
criteria, as the more items of food contained within the sandwich increase its
height drawing more attention to the sandwich. It had already met the Branding
and consistency criteria since this recipe includes a hashbrown. It will also meet
the Efficiency criteria due to the fact that this design is quite simple and therefore
do not require any extra work or equipment to create it.
