Attempt at written recipe version! (let me know if the formatting is off, i made this on desktop and i'm not sure if it will translate well!)
What you will need:
milk, water, instant coffee, cocoa powder, chocolate chunks,
butter, flour, baking soda, salt, dark brown sugar + regular sugar,
vegetable/canola oil, 2 eggs (take them out early to be room
temperature), vanilla, heavy cream
Bowl 1:
- Add 3/4 cup milk, 1/4 cup water, and 2 teaspoons of instant coffee into a saucepan
- Let the mixture go to a simmer
- After it has reached a simmer, add 1/2 cup cocoa powder, 1/2 cup chocolate chunks, and 1 stick of butter
- (not stated but visually shown) mix until smooth
- transfer the mixture to a bowl to cool and set aside
- Get another bowl
Bowl 2+3:
- In the new bowl, mix 2 cups flour, 1 tablespoon baking soda, and 1/4 teaspoon of salt
- Take the mixture in bowl 1 and add: - 1/2 cup of packed dark brown sugar - 1/2 cup regular sugar - 1/4 cup of either vegetable or canola oil (your choice) - 2 room temperature eggs - 1 teaspoon of vanilla
- mix to create a chocolate mixture
- take the flour mixture from earlier and add ~1/3 of it into the chocolate mixture, then mix it around
- Put the rest of the flour in and mix it with a folding spatula. Don't overmix
- Add 1/3 cup of chocolate chunks and fold it into the chocolate mixture
Pour into muffin tray and bake at 375 degrees Fahrenheit (~190.5 degrees Celsius) for 24 minutes
Muffin filling:
- Add 1/2 cup heavy cream, 1/4 cup chocolate chunks, and a pinch of salt into a saucepan, heat and mix until smooth. (no verbal directions but this is how I interpeted what was shown visually)
- When muffins are out of the oven, add filling (pipe it through the top most likely)
