Put of all your stuff in hot pan, much more broth than flour goop

Whisk constantly till much thicker

Taste

If too thick add more broth

If too thin add more flour slurry

If too bland add more flavor crystals

Yum

White gravy/cream sauce

Cream or milk

Flour

Butter or meat drippings

Flavor crystals

Pan on medium-ish

Mix flour with fat in hot pan with whisk until bubbly or something

Whisk in milk and flavor

Whisk for longer than you think you need to

It will get thick

Yum

Wine sauce

Red wine

Meat drippings or olive oil or something

Onion or shallot or whatever cut into pieces

Salt and other flavor crystals

Beef broth

Cook onion thing in fat

Put wine in pan

Bubble and stir wine until only half of its left

Add some beef broth and flavor stuff

Bubble until there’s slightly less of it

Yum
