New Headcanon:

The "official" language of Starfleet is Earth English because it was the official language of the Earth Starfleet when the Federation formed, and that became the basis for the Federation Starfleet.

However, as the Federation grew and Starfleet diversified, it became impractical to expect so many non-Earth species to learn English, so the Universal Translator in operations became standard (as seen in Prodigy).

HOWEVER, SOME Starfleet members do learn English and the translator lets those through...though THEN you might hear certain accents, if the specific person has that accent but still speaks English (Picard, Troi, Scotty, Pelia, and the occasional non-human who has an "alien" accent).

The majority of people we hear speaking English on later Star Treks are not speaking English, but the default English pronunciation unless the computer detects certain factors is the accent originally programmed into the UT by Hoshi Sato.

Kira's ancestral home on Bajor translates roughly to "Long Island," and the UT got confused.
