Here’s how I made it:

Veggies: I used potatoes, beets, asparagus, carrots, and chickpeas (but you can use anything you want!). Drizzle with avocado oil, sprinkle with paprika and salt, and roast at 425°F for 15-20 minutes. Take out the asparagus a bit earlier so it’s perfectly crispy.

Tzatziki: Mix 1 cup shredded cucumber (drained in cheesecloth) with 1 cup Greek yogurt, 1 tbsp lemon zest, 1/2 lemon juice (add more if it’s too thick), 2 minced garlic cloves, fresh dill (the more the merrier), and a pinch of salt.

Layer that creamy tzatziki in your bowl, top with roasted veggies, and savor the yum! The roasted chickpeas? They’re the cherry on top. 😋✨

Potatoes have received such a bad reputation as an unhealthy food while they are actually a fantastic option to add to our meals.

Potatoes are very satiating, taste delicious, and bring fiber, vitamin C, iron, potassium, and B6, and a bonus point if you keep the skin on!

If you’re looking to up your iron, this one is great to add to the meal plan, with a notable amount of iron per serving.

If you cannot get fresh dill, you can add dry dill, or swap for some mint or flat parsley, all of these options will taste great 🙂
