We've got a vegetable samosa filling stuffed inside puff pastry, with a sweet and sour tamarind glaze brushed on the inside. And my favourite way to serve this is with some masala onion gravy.

It's packed with onion, garlic, ginger, chilli, spices, carrots, peas, and potato. It's perfect for a (not so traditional) festive centrepiece, especially when it's packed with flavour.

This makes for a great vegetarian Christmas main, and it can easily be made vegan if you use vegan puff pastry.
