When I was browsing the submissions for AFF HK/Macau yesterday, I came across a few entries on Salted Egg Yolk Custard Bun 流沙包. There and then, I had a strong urge to give it a try as well! So happened I bought a couple of chinese pastry ink stamps in Hong Kong, was raring to test them. After reading through the recipes and steps from Bake for Happy Kids, Peng's Kitchen and Qi Qi in the house, decided to adapt the recipe from Qi Qi in the house first. First make the cream 
take a bowl
5egg yolks stir well 
sugar 96g 
salt 0.5g
vanila paste 5g 
stir well
cake flour 26g stir well 
add milk 440ml stir well 
take a saucepan
boil on low heat
stir quickly so that 
it does not stick 
to the bottom of the pot 
until thickened 
take off from the heat
butter 40g stir well
let it cool for 3 hours
then mix whit electric mixer 

Dough Preparation 
in the mixer bowl 
bread flour 500g
milk powder 20g
Instant yeast 6g
egg 1
sugar 50g
condensed milk 13g
milk 280ml
knead the dough for 8min
add butter 40g + salt 4g
knead the dough for 3min
rest the dough for 50min

separate the dough
into 60g each piece 
make balls
rest the dough for 15min
make the buns

Filling 
Custard 
mango jam 130g
stir well

Recipe makes 8 buns.

Dough:
330g bread flour
165g whole milk
40g granulated sugar
5g instant yeast
6g salt
1 egg
60g butter (chilled)

Custard filling:
1 egg
2 yolks
1 tsp vanilla
12g corn starch
40g granulated sugar
250g milk (hot)

Topping:
bag of @bequetconfections caramel
handful of berries
powdered sugar

1. To the bowl of a stand mixer, add all dough ingredients except for butter. Using the dough hook attachment, mix until the dough comes together. Then add the butter a few pieces at a time and knead until fully incorporated
2. Let the dough rise for 1.5-2hrs or until doubled in size
