Resumen
En aos recientes la importancia del control de alimentos, en cuanto a la identificacin de sus componentes
para evitar fraudes, ha crecido tanto en inters en las organizaciones estatales como en las empresas y en las
industrias. La globalizacin, el aumento de las importaciones y exportaciones, y los tratados de libre comercio
han propiciado un mayor intercambio y acceso de los alimentos a nivel mundial; junto con ello los problemas
asociados a los fraudes tales como la adulteracin, sustitucin, la intencionalidad, y falsificacin se han
incrementado. Por ello, se han reportado varios trabajos asociados al fraude alimentario, donde en la mayora
de ellas se muestran aplicaciones de nuevas tcnicas de identificacin. Sin embargo, una discusin acerca de
los tipos de fraude y su impacto sobre la sociedad, el bioterrorismo y la religin, ha sido poco abordada. Esta
revisin se enfoca bsicamente en describir los tipos de fraude en alimentos ms comunes. As como, se
mencionan las recientes tcnicas disponibles para detectar una adulteracin en carnes.
Palabras clave: fraude, adulteracin, alimentos, falsificacin, PCR.
Abstract
Prevent fraud has become great interest in the recent years by state organizations and companies because it
affects the food control. The globalization, increased imports and exports and free trade agreements have led
to greater sharing and access to food worldwide; along with it, the problems associated with fraud such as
adulteration, substitution, intentionality, and counterfeiting have been increased. Therefore, there are various
tasks associated with food fraud, which in most reviews published only new identification techniques have
been discussed. However, a discussion about the types of fraud and its impact on society, bioterrorism and
religion, has been little commented. This review focuses primarily on describing the types of fraud that has as
objective to obtain economic benefit or cause terrorism. Also, latest techniques available for detecting meat
adulteration are mentioned
