Help Us Welcome Chef Rodolfo!
Chef Rodolfo started his culinary career at a very early age in short order kitchens before working for American Golf at their Tatum Ranch and Ancala Country Clubs. Chef Rodolfo has since worked in every type of food outlet from the four-star Radisson Resort and Spa in Scottsdale to freestanding restaurants, major catering companies and business hotels, and eventually owning his own catering company for three years. He attended culinary school in Scottsdale and has been a valley resident since 1994. He lives in Phoenix with his wife Gloria, his daughter Mayah and three dogs (two Great Danes and a Coonhound mix). Whenever theres free time, Rodolfo enjoys spending time with his family, watching soccer, going to the lake/beach and traveling.

What is cholesterol? Its something in our body which should not be too high
Cholesterol is a waxy, soft, fat-like substance found in our blood and in all the bodys cells. Used for producing hormones, vitamin D and cell membranes, cholesterol serves many needed functions in our body. Our bodies produce about seventy-five percent of our cholesterol. Twenty-five percent of our cholesterol comes from foods we eat. Cholesterol is found only in animal products. Unable to dissolve in the blood, cholesterol must be transported to and from cells by special carriers called lipoproteins. The most important of these are high-density and low-density lipoproteins (HDL and LDL). LDL is known as bad cholesterol. Too much LDL can clog arteries and will increase risk of heart attack and stroke. Our bodies naturally produce LDL with some of us inheriting genes causing overproduction. Eating saturated and trans fats can increase our LDL. HDL is known as good cholesterol. HDL prevents LDL from sticking to artery walls and causing clogs. These clogs can lead to heart disease, heart attacks and strokes. Research shows HDL can be increased with regular exercise and eating a balanced, nutritious diet low in trans fats. Triglycerides are another form of fat in the body. Like other cholesterol, triglyceride comes from the foods we eat and the bodys natural production. Triglycerides are also produced when consumed carbohydrates are not immediately used in our tissues and need transport to fat cells for storage. When the body needs fats for fuel, hormones release triglycerides from cells, so they can be burned. While cholesterol is a necessary compound in our body, too much can be hazardous and lead to clogged arteries, heart disease, or stroke. Cholesterol in our body comes from natural production and from our diet. Optimal levels of cholesterol are less than 200 mg/dL for total cholesterol, less than 100 mg/dL for LDL, and greater than 40/50 mg/dL for women and men, respectively. Triglycerides should be lower than 150 mg/dL. Cholesterol is best controlled through regular exercise, working with a physician (including screening), a diet low in cholesterol and saturated fat, and maintaining a healthy body weight.
